Danielle's Three Ingredient Peanut Butter Protein Cups

Ingredients:

1/3 cup Peanut Butter (or any nut Butter)

1 1/2 cups Dairy-Free Chocolate Chips

1 scoop Protein Powder

Lets Start:

  • Line a muffin tray with liners (about 6 large, or 12 mini)

  • Melt chocolate (see note below)**

  • Pour chocolate into each mold, covering bottom of liners (about 1/4”)

  • Place in freezer.


In a separate bowl, combine peanut butter and protein powder until consistency of dough. If too runny, add more protein powder. If too thick, add more peanut butter.


Roll dough into small balls, then press down to form discs. Remove tray from freezer.

Place discs on chocolate and freeze again for about 10 min.


Cover with remaining chocolate, (and optional sea salt) and freeze again until solid.

** If you don’t have a double boiler, fill a small pot with water and simmer at medium heat. Place a medium metal or glass bowl in the pot, on top of the water (should be bigger than pot, and not touching water). Place chocolate in bowl and stir as it melts.
